Twix Bars
Ingredients:
Cookie Layer
- 2/3 cup coconut flour OR 1 3/4 cup almond flour 
- 1/3 cup coconut oil (melted and cooled) 
- 3 tbsp maple syrup 
Caramel Layer
- 1/3 cup maple syrup 
- 2 tbsp coconut oil 
- 2 tbsp peanut butter (any nut butter works!) 
Chocolate Layer
- 1/2 cup chocolate chips 
- 1 tsp coconut oil 
Directions:
- Preheat the oven to 350 degrees. 
- Mix together the ingredients for the cookie layer. Press it into an 8x8 pan so the whole bottom is covered. 
- Bake the cookie layer for 8 minutes (COCONUT FLOUR BASE) or 13 minutes (ALMOND FLOUR BASE) until the crust starts to brown on the edges. Wait for the crust to cool. 
- On medium heat, add in the maple syrup and coconut oil into a sauce pan. Stir until completely melted. Add in the peanut butter and whisk it together until the mixture begins to thicken and form a caramel. Be sure not to talk away from the caramel and keep a close eye because it can burn easily. 
- Add the caramel to the cookie layer and spread across the whole pan. Put the cookie and caramel into the freezer and let it freeze for at least 30 minutes. 
- Once caramel is set, in a microwave safe bowl put the coconut oil and chocolate into the microwave and mix at 30 second intervals until chocolate is completely melted. 
- Add the chocolate layer to the pan, and freeze for at least another 30 minutes. 
- Take out, slice, and enjoy!
