Sweet Potato Nachos
Ingredients:
- 2-3 medium sweet potatoes 
- 1 tbsp olive oil 
- 1 tsp salt & 1 tsp pepper 
- 1 tsp onion powder 
- 1 tsp garlic powder 
- 1/2 can drained and rinsed black beans 
- 1/2 chopped white onion 
- 1/3 cup mexican cheese 
Directions:
- Preheat the oven to 400 degrees. 
- Slice the sweet potatoes into thin "chips". 
- In a bowl season the potatoes with olive oil, salt, pepper, onion powder, and garlic powder. 
- Line a baking sheet with parchment paper and spray with non-stick spray. Place the potatoes on the sheet and bake for 40 minutes or until perfectly crisp. 
- In a pan on medium heat add 1 tsp of olive oil. Sauté the chopped onions until translucent and fragrant. 
- Transfer the sweet potato "chips" to a skillet if you have one (any pan works for this!) and top with onions, black beans, and cheese. 
- Broil on high for 4 minutes or until cheese is golden brown. 
- Top with sliced avocado and any other toppings you'd like!
