Spaghetti Squash Pizza
Ingredients:
Crust
- 1 Spaghetti Squash 
- 2 eggs 
- 1/2 cup shredded mozzarella 
Toppings (feel free to get creative!)
- 1/2 cup shredded mozzarella 
- 1/3 cup marinara sauce 
- 1/3 cup grated parmesan 
- fresh basil (optional) 
Directions:
- Preheat oven to 400 degrees. 
- Poke the spaghetti squash with a fork all around and microwave for 4 minutes. 
- Cut the spaghetti squash in half and scrape out the seeds. 
- Roast face down on a baking sheet for 1 hour. 
- Once cooled, scrape out the insides of the spaghetti squash. Using paper towels, a cheese cloth, or a clean dish rag, squeeze the water out of the squash (this is really important-there is going to be a lot of liquid, this will help make the crust crispy). 
- In a bowl, mix together the eggs and mozzarella. 
- Transfer the mixture to a baking sheet and form into a pizza pie shape. 
- Bake for 15 minutes. 
- Take out the crust and add the cheese, sauce, and basil, or toppings of your choice. 
- Bake for 5 more minutes, broil on high for 2 minutes, cool, slice and serve!
