Chickpea Salad
Ingredients:
- 1 can of chickpeas, drained and rinsed 
- 1/4 cup of plain greek yogurt (I used Two Good Yogurt) 
- 1/2 tbsp fresh dill 
- 1/2 tsp onion powder 
- 1 tsp honey 
- juice of 1 lemon 
- salt & pepper to taste 
Directions:
- Drain and rinse the chickpeas. 
- Empty the chickpeas into a medium-sized mixing bowl. Using a fork or a masher, mash the chickpeas until they are no longer whole chickpeas (don't mash too much). 
- Add in the greek yogurt, fresh dill, onion powder, honey, lemon juice, salt and pepper. 
- Eat plain, in a wrap, in lettuce, or on a sandwich!
