Brookie Pie
Ingredients:
Brownie Layer
- 2 eggs 
- 1/2 cup coconut sugar 
- 1/2 cup almond butter 
- splash of vanilla extract 
- 1/3 cup coconut oil (melted and cooled) 
- 1/2 cup almond flour 
- 1/2 cup cocoa powder 
Cookie Layer
- 1 1/2 cup almond flour 
- 1/2 tsp baking soda 
- 1 egg 
- 1/3 cup coconut sugar 
- 1/2 cup almond butter 
- 1/4 cup coconut oil (melted and cooled) 
- splash of vanilla extract 
- 1/2 cup chocolate chips 
Directions:
Brownie Layer
- Preheat the oven to 350 degrees. 
- Spray a round pan with non-stick cooking spray. 
- In a bowl, combine eggs, coconut sugar, almond butter, vanilla, and coconut oil. Whisk together. 
- Add in the almond flour and cocoa powder. 
- Mix together and transfer to the baking pan. 
- Bake in the oven for 12 minutes. Take out and cool for 10 minutes before adding the cookie layer. 
Cookie Layer
- In a bowl combine almond flour and baking soda. 
- Add in the egg, coconut sugar, almond butter, coconut oil, and vanilla. Mix all ingredients until well combined. 
- Fold in the chocolate chips. 
- Once the brownie layer has been cooled for about 10 minutes, add the cookie layer on top. 
- Bake for another 12 minutes. 
- Take out, cool, and dig in!
