Salmon Stir Fry
Ingredients:
- 1 piece of salmon 
- 2 cloves of garlic 
- 1 tsp olive oil 
- 1 tsp onion powder 
- 1 tsp salt 
- 1 tsp pepper 
- 2 tbsp coconut aminos 
- 1 tsp sesame oil 
- 1 cup chopped asparagus 
- 1 cup sliced mushrooms 
- 2 cups cauliflower rice 
- handful of spinach 
- sriracha (optional) 
Directions:
- Add the olive oil to a sauté pan on medium-low heat. Once hot, add in the chopped garlic and sauté until lightly browned. 
- Turn the heat up to medium and add the salmon (skin side down) to the pan. Season with onion powder, salt, pepper, coconut aminos, and sesame oil. 
- Once the liquids start to sizzle in the pan they will start to form a glaze; use a spoon and pour the glaze on top of the salmon. 
- After 7 minutes (or until the sides of the salmon begin to pink up), flip the salmon and let it cook on the other side for another 5 minutes. Once cooked, take the salmon off of the pan, but do not turn off the heat. 
- Using the leftover sauce from the salmon, add the asparagus and mushrooms into the pan and sauté until soft. 
- Add in the cauliflower rice and spinach. Season with salt and pepper to taste. 
- For some extra spice add some sriracha. Once thoroughly cooked, plate with the salmon and enjoy!
