Kale Caesar Salad

Kale Caesar Salad

Ingredients:

  • 3 bunches of kale

  • 1 tsp olive oil

  • 1 tsp sea salt

  • 1/2 cup chickpeas

  • 1/4 cup shredded parmesan

  • 1/2 serving of my homemade caesar dressing

Directions:

  1. Wash and de-stem kale.

  2. Transfer to a food processor and pulse until the kale is finely chopped (this step is optional, but I highly recommend it!)

  3. In a bowl combine the kale with olive oil and salt. Massage the kale and let it sit for 10 minutes (this will help soften the kale and make it easier to digest/more delicious!).

  4. While the kale is sitting, put chickpeas in the air fryer for 10 minutes, shaking half way through.

  5. Add in my homemade caesar dressing, chickpeas, and parm. Mix together, plate, and enjoy!

Caesar Dressing

Ingredients:

  • 1 container plain greek yogurt (I used Two Good yogurt)

  • 1 tsp dijon mustard

  • 2 garlic cloves

  • juice of 1/2 a lemon

  • 1/4 cup parmesan

  • 1/2 tsp garlic powder

  • 1/2 tsp Worcestershire sauce

  • 1 tbsp water

  • salt & pepper to taste

Directions:

  1. Combine plain greek yogurt, dijon mustard, garlic cloves, lemon juice, parmesan, garlic powder, Worcestershire sauce, water, and salt & pepper to a blender/food processor.

  2. Blend until well combined and enjoy!
