Crispy Sweet & Spicy Tofu

Ingredients

Tofu:

  • 1 package of extra firm tofu

  • 2 tsp olive oil

  • 1 tsp coconut aminos (soy sauce or tamari works too)

  • 1 tbsp corn starch

Sauce:

  • 1/4 cup peanut butter

  • 2 tbsp mirin

  • 1 tsp chilli flakes

  • 2 tbsp maple syrup

  • 2 tsp sesame oil

  • juice of 1 lime

  • 1 tbsp coconut aminos

  • 4 tbsp water

Other:

  • 3 cloves chopped garlic

  • 2 tsp olive oil

  • 2 stalks green onion (chopped)

Directions:

  1. Preheat oven to 400 degrees.

  2. Take the tofu out of the package and place a paper towel on top of a plate. Put the tofu on top of the paper towel, and then place another paper towel on top of the tofu. Place a plate on top and then put a can or bottle on top and let it sit for at least 30 minutes. This will help get the water and moisture out of the tofu, helping to make it extra crispy. If you skip this step it will affect the crispiness.

  3. Once the tofu is drained, cut into cubes and place in a bowl. Add olive oil, coconut aminos, and corn starch. Mix until tofu is well coated.

  4. Place the tofu on a baking sheet and bake for 30 minutes, flipping halfway.

  5. While the tofu is baking, prepare the sauce.

  6. Combine peanut butter, mirin, chili flakes, maple syrup, sesame oil, lime juice, coconut aminos, and water. mix until thoroughly combined.

  7. Take the tofu out of the oven and cool for 5-10 minutes.

  8. While the tofu is cooling, heat the extra 2 tsp of olive oil in a pan on medium heat.

  9. Add chopped garlic and green onion and cook for 2-3 minutes.

  10. Add in the tofu, then add in the sauce and mix until tofu is evenly coated.

  11. Let the tofu cook in the sauce until it is cooked down.

  12. Serve with noodles, rice, veggies, or just on its own. Top with sesame seeds and enjoy!
