Egg Roll in a Bowl
Ingredients:
- 1 lbs ground meat (turkey/chicken/beyond meat/beef) 
- 1 bag coleslaw mix 
- 1 egg 
- 1 inch knob of ginger (chopped) 
- 5 cloves garlic (chopped) 
- 2 tsp olive oil 
- 2 tsp sesame oil 
- 1/2 tsp garlic powder 
- 1/4 cup soy sauce/coconut aminos 
- 2 tsp rice vinegar 
- 1 tsp maple syrup 
- 1 tsp sriracha 
- 2 stalks green onion 
Directions:
- Heat 2 tsp of olive oil in a pan on medium high heat. 
- Add chopped garlic and ginger into the pan and let cook for ~1 minute/until golden brown. 
- Add in the ground meat and cook until done. Season with salt and pepper to taste. 
- Take the meat out of pan and set aside. 
- In a small bowl combine coconut aminos, rice vinegar, maple syrup, and sriracha. 
- In the same pan that you cooked the meat in, add 2 tsp sesame oil on medium heat. 
- Add in coleslaw mix and cook down a bit. Season with garlic powder, salt and pepper. 
- Add the meat back into the pan with the coleslaw. 
- Add the sauce into the pan. 
- Make a well in the middle of the pan and crack an egg. Let it sit for ~1 minute, then scramble and combine with the rest of the dish. 
- Season with salt and pepper to taste. 
- Plate, add green onion and sesame seeds, and enjoy!
