Thai Peanut Lettuce Wraps

Yields 3-4 servings

Ingredients:

2 tbsp avocado oil

3 cloves of garlic (chopped)

1 lb ground meat

3 large carrots (chopped)

1 yellow bell pepper (chopped)

1/2 cup chopped snap peas

1 bag rainbow coleslaw

Lettuce cups (I used a head of iceberg)

Sesame seeds

2 stalks of green onion (chopped)

Sauce

1/4 cup soy sauce

1.5 tbsp peanut butter

2 tsp sriracha (or more depending on spice tolerance)

1/2 squeezed lime juice

1-2 tbsp warm water

Directions:

  1. Heat a pan on medium heat. Add avocado oil and garlic and cook until garlic is fragrant. Add ground meat and cook until completely cooked (this should take about 10 minutes).

  2. Once the meat is cooked, if your pan is big enough, add in the chopped carrots, chopped bell pepper, snap peas, and coleslaw into the pan and cook down. While that’s cooking, combine soy sauce, peanut butter, sriracha, and juice in a small bowl. Mix together and add warm water as needed to thin the sauce out.

  3. When your veggies are cooked, add back in the ground meat if you took it out, pour the sauce into the pan, and continue to cook until well combined.

  4. Plate the mix into your lettuce cups, top with sesame seeds and green onion, and enjoy!
