Smashed Sprinkle Cookies

Yields 24 cookies

Ingredients:

  • 1 egg

  • 1/3 cup maple syrup

  • 1/4 cup almond butter

  • 1/3 cup butter or coconut oil (melted)

  • splash of vanilla extract

  • 1/4 cup coconut sugar

  • 2 cups almond flour

  • 1/2 cup coconut flour

  • 1/4 tsp salt

  • 1/4 tsp baking soda

  • 1/2 tsp baking powder

  • rainbow sprinkles

Directions:

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or spray with non-stick spray.

  2. In a bowl crack & whisk the egg. Add in the maple syrup, almond butter, melted butter (or coconut oil), and vanilla. Mix until well combined.

  3. Add the coconut sugar and mix in.

  4. Add the almond flour, coconut flour, salt, baking soda, and baking powder into the bowl and mix until a dough forms.

  5. Fold in the sprinkles, form into cookies, and bake for 20 minutes at 350 degrees. The cookies will not spread that much while in the oven, so if your cookies aren’t spreading that’s normal!

  6. Take the cookies out of the oven, and using the back of a spoon, smash the cookies. Let them cool for 10-15 minutes and enjoy!
