Egg Roll in a Bowl

Ingredients:

  • 1 lbs ground meat (turkey/chicken/beyond meat/beef)

  • 1 bag coleslaw mix

  • 1 egg

  • 1 inch knob of ginger (chopped)

  • 5 cloves garlic (chopped)

  • 2 tsp olive oil

  • 2 tsp sesame oil

  • 1/2 tsp garlic powder

  • 1/4 cup soy sauce/coconut aminos

  • 2 tsp rice vinegar

  • 1 tsp maple syrup

  • 1 tsp sriracha

  • 2 stalks green onion

Directions:

  1. Heat 2 tsp of olive oil in a pan on medium high heat.

  2. Add chopped garlic and ginger into the pan and let cook for ~1 minute/until golden brown.

  3. Add in the ground meat and cook until done. Season with salt and pepper to taste.

  4. Take the meat out of pan and set aside.

  5. In a small bowl combine coconut aminos, rice vinegar, maple syrup, and sriracha.

  6. In the same pan that you cooked the meat in, add 2 tsp sesame oil on medium heat.

  7. Add in coleslaw mix and cook down a bit. Season with garlic powder, salt and pepper.

  8. Add the meat back into the pan with the coleslaw.

  9. Add the sauce into the pan.

  10. Make a well in the middle of the pan and crack an egg. Let it sit for ~1 minute, then scramble and combine with the rest of the dish.

  11. Season with salt and pepper to taste.

  12. Plate, add green onion and sesame seeds, and enjoy!
